Green Smoothie Goodness!

Gettin’ healthy with a green smoothie!  The last couple of weeks has seen us traveling in the South with our Tennessee grand-kids.  While we had a great time hitting all the touristy spots–Rock City, Ruby Falls, Incline railway on Lookout Mtn., TN Aquarium and I-Max theater in Chattanooga, the Southern tourist cuisine has left me feeling a little…….blah.  Not blaming the South, really, but it’s hard to be a vegan traveling with 3 kids whose favorite meal is chicken nuggets in areas that specialize in fried meats and anything smothered in cheese!  I’m sure there were some great vegan places out there but our busy schedule made it difficult to check anything out.  On top of that we both returned with some sort of upper respiratory cough, congestion, fever thing!  OK, enough with the whining!  Here’s the basic smoothie recipe:

In a blender whirl:  1 banana, about 1 cup of frozen or fresh fruit, and 2 handfuls of fresh spinach!

I used frozen peaches and some green grapes and I added a small amount of pomegranate juice.  You can vary the amounts, use kale instead of spinach and add a little liquid or not.  If you want to keep the bright green color don’t add a lot of red stuff like berries….but,  this also tastes great with frozen berries of any kind.  Trust me you’ll love this–even if you’re not a spinach lover!
